How to ripen green tomatoes

October 2, 2008 by Andrea Bellamy 8 Comments

Ready or not! Here I come…

The rain started today, signalling the end of what was a beautiful stretch of sunny days. Figuring that my tomatoes had probably seen the last of the warmth, I harvested the lot of them.

Did you know that placing a ripe banana in a paper bag with your green tomatoes will help them ripen quickly? There. You learned something today.

Wow, I did not know that you could ripen tomatoes that way. Certainly something I will have to keep in mind. Thanks for the info! :)

Hey Elaine! Thank you. I love the current post on your site – I hadn’t seen that quote from Camus before. Love it!
    Courtney – you’re welcome. :-)

I’ve got a lot of big green tomatoes this year. So this weekend I’m going to experiment with making a fried green tomato salad. I’m thinking bacon, and chunks of white cheddar, and a vinegary dressing.

Oh thank you for the tip. I have many green toms and the first of the winter rains in the SF East Bay is predicted for this weekend.

Never thought of bananas to help tomatoes ripen. Apples will help out too.

I’ve also used apples to do the trick. Some suggest placing the paper bag into fridge but that will only slow ripening.
